Fuel your mornings with this none-cook, none-fuss Raspberry, Banana and coconut overnight oats. This simple, yet delightful breakfast only takes five minutes to prepare and can be kept for up to 5 days in a refrigerator! This recipe is, therefore, perfect for grabbing out the fridge on a busy morning and will make sure you get the right nutrients you need to start your day.

- A preserving jar: Home Made Glass 500ml Preserving Jar

 

Ingredients

  • ⅓ cup oats
  • ⅓ cup coconut milk
  • ⅓ cup natural yoghurt
  • ¼ cup frozen raspberries
  • 1 tsp. vanilla extract
  • 1 tbsp. maple syrup
  • 2 tbsp. chopped almonds
  • 2 tbsp. dried coconut

 

Method 

In a small bowl add the oats, coconut milk, yoghurt and raspberries (reserving a few) and mix together

Mash half the banana and add to the mixture

Add vanilla extract, maple syrup and chopped almonds and mix together

In a medium sized jar, add half the mixture to the bottom

Slice the other half of the banana and add a few slices on top

Add a few raspberries

Top with the rest of the oat mixture

Sprinkle with the dried coconut and remaining raspberries

Refrigerate overnight
