Elderflower Gin & Tonic
G&T with a twist! Recreate this amazing Elderflower G&T cocktail, a perfect cocktail for this year's summer!
Ingredients:
20 elderflower heads
450g white sugar
1 tsp citric acid
1 litre of water
2 shots of gin, 35ml each
2 cans of tonic water
8 wild strawberries or everyday strawberries, cut up into small pieces
Method:
Place the washed elderflowers into a large non-stick pan followed by sugar, water and citric acid.
Gently heat the pan until the sugar dissolves, then turn up the heat and boil for 5 minutes.
Leave the pan to cool a little, before carefully pouring the mixture through a sieve to catch all the flowers, then pour into a homemade bottle and keep it in the fridge.
To make the cocktail, fill your glass with ice and then pour a shot of syrup over the ice.
Add a few strawberries and a measure of your favourite gin, followed by your chilled tonic.

Make sure you can identify any plant and are confident you're picking the correct plant. If in doubt, leave the picking until you have brushed up on your plant knowledge or accompanied by an expert.
We all get a little hungry at times, please don't try to eat any plants you're unsure of :)
When foraging, please be mindful and leave as much as possible for the wildlife!
Ensure you seek permission before foraging. In certain areas, plant species will be protected, so you must do your homework and check with the landowner or local council before you start on your adventure.
Ensure the area you have selected has plenty of supply and don't be greedy. Only collect what you need, as this will allow other foragers to pick from the same location. Last but not least, be sure to leave enough for the wildlife!
Just so you're aware, Britain’s wild plants are all protected under the Wildlife and Countryside Act (1981). This means that it is illegal to dig up or remove any wildlife plants. Please check the law before you forage or if you're in doubt.
